Aztec Sausage Skillet

Lard
4 Onions
8 cloves Garlic
1 lb. Pork sausage
2 dried red chilis
1 tbsp. each cumin, black pepper, salt, oregano
3 cloves
5 tomatoes
4 jalapenos
8 oz. spinach
Jar of guacamole seasoning
Quinoa
Cocoa powder
Yogurt or sour cream

Fry a generous amount of lard with sliced onions till golden. Add crushed & diced garlic along with sausage. After a bit, throw in chilies, spices, and rest of sliced/chopped veggies. This is also when I added some frozen quinoa to mine. Cook through.
Garnish as desired with yogurt or sour cream. I ate mine with a spoon of extra dark cocoa powder... yummy!

    here's my new fave way to eat kefir:
    1-2 T. cocoa
    dash sea salt
    sweetener
    baking soda if you really like tang!

    soooo yummy! it gets thick like pudding if you strain out a bit of the whey first; i think the cocoa also makes it thicker.
